Birria rewards patience. The beef is slow-cooked and braised until it's tender enough to pull apart, and the result is rich, deeply savory and made for dipping.
What's in it
Our Birria Taco layers slow-cooked braised beef with two cheeses on a handmade corn tortilla made in-house. Queso Monterey melts into a rich, stretchy layer, while Queso Panela adds a milder, fresh-cheese note. Consomé comes alongside for dipping. The Birria Taco is $7.99.
How to eat it
Dunk the taco into the consomé before every bite, or spoon a little over the top. The broth softens the tortilla, warms the cheese and brings back all the flavor of the braise. Keep extra napkins close; a little mess is part of the experience.
More birria on the menu
Birria shows up in a few other places, too:
- Birria Empanada ($12.90): a trio of fried house masa filled with Oaxaca cheese and braised pulled beef, served with chipotle crema and consomé
- Birria Soup: served by the cup or bowl with cilantro, onions and tortillas
- Plato de la Casa ($25.99): choose birria and get beans, rice, fried green onion, jalapeño and tortillas
Birria isn't part of the $1.99 Taco Tuesday lineup, but it's worth ordering any day of the week. Explore more of our tacos in Carlsbad, or see how the house plate comes together on the Plato de la Casa page.
