Taco Catering in Carlsbad: How to Plan a Taco Bar for Any Crowd
From a 3–4 person Family Style kit to the 12–14 person Let's Party package, here's how to size, stock and schedule a taco bar for an office lunch, wedding or party in North County.

A taco bar is one of the easiest ways to feed a group well. Guests build their own plates, picky eaters and adventurous ones both find something they like, and the format works as well for a team lunch in Carlsbad as it does for a backyard birthday in Vista. This guide walks through how to plan taco catering with Casero Taqueria, from choosing a package to deciding between pickup and delivery.
Step 1: Start with your headcount
Our build-your-own taco packages are sized by the number of people they're designed to serve, so headcount is the first decision. You pick a package, choose your protein, and we pack the fixings.
- Family Style (3–4 people), $84: 1 lb of protein, 16 oz of rice and beans, a big bag of chips, 8 oz of pico, 8 oz of salsa (Casero and verde) and 10 tortillas
- Double Family Style (6–8 people), $159: 2 lb of protein, 16 oz of rice and beans, a big bag of chips, 8 oz of pico, 8 oz of salsa and 20 tortillas
- Tacos + Burritos (10–12 people), $136: a taco setup built on 1 lb of al pastor with 16 oz of rice and beans, a big bag of chips, 8 oz of pico, 8 oz of salsa and 10 tortillas, paired with burritos
- Let's Party (12–14 people), $227: 3.5 lb of protein, 32 oz of rice and beans, a big bag of chips, 16 oz of pico, 16 oz of salsa and 28 tortillas
- Burritos Catering, $122: 12 pollo asado burrito halves with 16 oz of rice and beans, 8 oz of salsa, 8 oz of pico and a big bag of chips
Taco catering proteins include carne asada, pollo asado, al pastor, carnitas and veggies.
"We got chicken and carne asada, everyone at our party raved about the food! Came with everything we needed." — a Casero catering guest
Step 2: Estimate quantities with the package ranges
The simplest way to size an order is to match your guest count to the package ranges and combine packages as needed. A few examples:
- 10 guests: Tacos + Burritos (10–12), or a Double Family Style plus a Family Style
- 25 guests: two Let's Party packages cover 24–28 people
- 40 guests: three Let's Party packages cover 36–42 people
If your group skews toward big appetites, or the event runs long, move up to the next size or add a tray of burrito halves. If there's plenty of other food, you can plan toward the lower end of each range.
Step 3: Round out the spread
Add-ons turn a taco bar into a full menu:
- Half-burrito trays (12 halves): Pollo Asado $55, Carnitas $68, Grilled Shrimp $75, Carne Asada $85, or a Burritos Combos tray that splits two proteins
- Salads for 8–10: Casero Greens $42, TJ Caesar $45, Mexican Cobb $58
- Starters for 8–10: 32 oz Guacamole with a large bag of homemade chips $34, 32 oz Shrimp Ceviche with homemade tortilla chips $42, 32 oz Esquite $20
- Sides for 8–10: rice $8, beans $8, salsa $12 and a big bag of chips $5.99, plus 8 oz of sour cream ($3.50) and 16 oz of Mexican cheese ($4)
- Dessert: Churros catering, 20 pieces with Mexican chocolate, $30
Don't skip the beans. As one guest put it: "Everyone love, love, loved the refried beans."
Step 4: Plan for dietary needs
Taco bars are naturally flexible. For vegetarian guests, veggie taco catering, the Casero Greens salad and guacamole make good anchors. For gluten-sensitive guests, ask about corn tortillas, which are naturally gluten-free. Either way, share any allergies or dietary restrictions when you order so we can talk through options.

Office lunch, wedding or party: what changes
Corporate taco catering. For office lunches, speed matters. Burrito halves are easy to grab between meetings, and a taco bar keeps a long lunch social. When you order, you can add utensils if your office doesn't have its own.
Wedding taco bar. A taco bar works for rehearsal dinners, welcome parties and late-night receptions. For weddings, reach out early so we can talk through timing and quantities. If you'd rather celebrate at Casero, our private events options include a full restaurant buyout for 50–120 guests and the outdoor lounge for 16–30.
Birthdays and backyard parties. Let's Party is built for this: 12–14 people, 3.5 lb of protein and everything you need to set up a taco bar on a folding table.
